Roasted Turnips

2 lbs. turnips, fresh–not canned.
1 Tbsp. olive oil
Black Pepper to taste

Prep Time: 5 min.
Cook Time; 25 min.
Total Time: 30 min.


  1. Preheat oven to 475 degrees.  Cut the turnips into bite-size pieces (I’d suggest 1″ by 1/2″  wedges).  If you got the turnips from a farmers market and they have either the leaves or the end root, trim both off and discard.
  2. Toss turnips with the olive oil and pepper in a bowl.
  3. Place turnips on a baking sheet, ensuring they’re in one even layer.
  4. Cook at 475 degrees for 20-25 minutes, flipping once during cooking.  The turnip should be slightly firm in the middle when done.
